CAUSA LIMEÑA

  • 9 medium red potatoes
  • 1 head Bibb lettuce
  • 3 garlic cloves
  • 2 oz. grated Romano cheese (1/4 cup)
  • 10 olives
  • 1 lime
  • Louisiana red sauce or other bottled hot sauce
  • Extra virgin olive oil

Cook potatoes. Smash potatoes. Add juice of one lime, olive oil, grated garlic, Romano cheese, and a dash of salt to taste. Sprinkle hot sauce to taste (not too much). Smash again. Mold into loaf shape, with lettuce on the side and olives on top. Diners may add more hot sauce on top to taste.
